What I do on trains is:
1) Make sure the zippers on my bag are locked.
2) Use a retractable lock to lock the bag to the overhead luggage rack. Mine was made by Eagle Creek and I've had it for years. Sadly, they don't make it anymore. But you can get one like this:

Or, you can get one of these to attach to the overhead or use it to attach your two bags together and use a retractable to connect the whole thing to the overhead.

One bit of advice, don't wait until the last minute to unlock your bags.

I took the train during the day time. I believe it's a 7 hour trip, but it goes fast. There casual dining cars where you can get sandwiches, meals, and beverages.

For which the question might be much the same. One wouldn't want to lug a full-sized carry-on bag one car to the next, or several cars down, so how do you handle personal security? Likely we are back to the old principle of having one smaller "personal" bag into which anything of value can be stowed, and taken as one goes from car to car for meals or the like...while leaving some sort of lock on one's main bag, to secure it.

If you are sleeping the whole time, consider just using the bag as your pillow (I did this in India), you can wrap your sarong/a shirt over it for a cover.
Also, I second getting a cord and lock as well - there are usually bars that you can attach it to.
Finally, like Alan said, get a second bag you can take with you with valuables... and then lock up the main bag to a post AND to each other AND each zipper locked. Also ask a nearby passanger to watch, it usually won't hurt (except at airports in the US, then you are a terriorist and it's illegal... (a bit tounge in cheek there)).

Thank you for your comments! I'll be getting a couple locking cables to go along with our zipper locks. I like the idea of a separate bag but, aside from my camera and phone, we're not bringing anything we can't afford to lose. I never thought about using my bag as a pillow! Great idea!

If you are really concerned, you can buy a pacsafe bag protector, which is their xomesh protection. It goes around the bag(s) and then you can lock it to an immovable object.

My wife and I will be taking the midnight train to Budapest (not Georgia) from Prague this summer. We'll have one carry on bag each (a Red Oxx Extra Small Aviator and an Osprey Porter 46). Aside from getting a private sleeper car, how do you recommend we secure them theft and/or wandering fingers so we can sleep peacefully on the train? Also, if anyone has ever taken this particular train before, what was it like?
